Korean Beef with Shiitake Mushrooms

Korean Beef is one of our favorite dishes and it finds its way onto menu almost every other week. Here is a simple, yet delicious, Korean Beef Recipe. 

Ingredients:

  • 1 lb ground beef or thinly sliced flank steak

  • 6 oz fresh shiitake mushrooms, sliced

  • 2 tablespoons sesame oil

  • 3 cloves minced garlic 

  • 1 tablespoon grated ginger

  • 1/2 cup soy sauce or coconut aminos

  • 1/4 cup brown sugar (I like it sweeter and use a 1/2 cup)

  • 1 tablespoon rice vinegar

  • 1 tablespoon gochujang (Korean chili paste, optional for spice)

  • 2 green onions, sliced

  • Sesame seeds for garnish

  • Cooked rice for serving

  • Broccoli, carrots, bok choy ect. if desired

 


 

Instructions:

  1. Heat sesame oil in a large skillet over medium-high heat.

  2. Add minced garlic and grated ginger, sauté until fragrant.

  3. Add ground beef (or sliced steak) and cook until browned.

  4. Add sliced shiitake mushrooms, cooking until tender and browned.

  5. In a small bowl, mix soy sauce, brown sugar, rice vinegar, and gochujang (if using).

  6. Pour sauce into the skillet, stir to coat, and cook for 2–3 minutes until the sauce thickens.

  7. Serve over cooked rice, garnished with green onions and sesame seeds.

I usually add steamed broccoli, carrots, spinach or sautéed bok choy to make it a well rounded meal.
