Korean Beef with Shiitake Mushrooms
Korean Beef is one of our favorite dishes and it finds its way onto menu almost every other week. Here is a simple, yet delicious, Korean Beef Recipe.
Ingredients:
-
1 lb ground beef or thinly sliced flank steak
-
6 oz fresh shiitake mushrooms, sliced
-
2 tablespoons sesame oil
-
3 cloves minced garlic
-
1 tablespoon grated ginger
-
1/2 cup soy sauce or coconut aminos
-
1/4 cup brown sugar (I like it sweeter and use a 1/2 cup)
-
1 tablespoon rice vinegar
-
1 tablespoon gochujang (Korean chili paste, optional for spice)
-
2 green onions, sliced
-
Sesame seeds for garnish
-
Cooked rice for serving
- Broccoli, carrots, bok choy ect. if desired
Instructions:
-
Heat sesame oil in a large skillet over medium-high heat.
-
Add minced garlic and grated ginger, sauté until fragrant.
-
Add ground beef (or sliced steak) and cook until browned.
-
Add sliced shiitake mushrooms, cooking until tender and browned.
-
In a small bowl, mix soy sauce, brown sugar, rice vinegar, and gochujang (if using).
-
Pour sauce into the skillet, stir to coat, and cook for 2–3 minutes until the sauce thickens.
-
Serve over cooked rice, garnished with green onions and sesame seeds.
I usually add steamed broccoli, carrots, spinach or sautéed bok choy to make it a well rounded meal.
