 Lion’s Mane Mushroom Soup

Ingredients:

  • 8 oz Lion’s Mane mushrooms, chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 stalk celery, diced

  • 2 tablespoons butter or olive oil

  • 4 cups vegetable or chicken broth

  • 1/4 cup dry white wine (optional)

  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)

  • Salt and pepper to taste

  • Optional: 1/4 cup heavy cream for richness

Instructions:

  1. Heat butter or oil in a pot over medium heat. Sauté onion, celery, and garlic until soft.

  2. Add chopped Lion’s Mane, cooking until lightly browned.

  3. Pour in wine (if using), cooking for 2 minutes.

  4. Add broth and thyme, bring to a simmer, and cook for 15–20 minutes.

  5. Optional: Blend before serving for a creamy soup.

Serving Suggestions:

  • Serve with crusty bread for dipping.

  • Garnish with fresh herbs or a swirl of cream.

  • Add cooked wild rice or barley for heartiness.
