Lion’s Mane Mushroom Soup
Ingredients:

8 oz Lion’s Mane mushrooms, chopped

1 small onion, diced

2 cloves garlic, minced

1 stalk celery, diced

2 tablespoons butter or olive oil

4 cups vegetable or chicken broth

1/4 cup dry white wine (optional)

1 teaspoon fresh thyme (or 1/2 teaspoon dried)

Salt and pepper to taste

Optional: 1/4 cup heavy cream for richness
Instructions:

Heat butter or oil in a pot over medium heat. Sauté onion, celery, and garlic until soft.

Add chopped Lion’s Mane, cooking until lightly browned.

Pour in wine (if using), cooking for 2 minutes.

Add broth and thyme, bring to a simmer, and cook for 15–20 minutes.

Optional: Blend before serving for a creamy soup.
